Un vino santiague\u00f1o entre algodones"},"content":{"rendered":"<p><strong><em>El Vi\u00f1edo Dos Santos est\u00e1 ubicado a pocos kil\u00f3metros de la ciudad de Beltr\u00e1n, en el coraz\u00f3n del \u00e1rea de riego del R\u00edo Dulce en Santiago del Estero. <\/em><\/strong><br \/><strong><em>Revista Campo para Todos recorri\u00f3 el campo acompa\u00f1ado por su propietario Jos\u00e9 Luis Dos Santos junto a sus hijos Leo, Jos\u00e9 Alfredo. Tenemos fotos familiares de los vi\u00f1edos en el fondo de casa y \u00e9l se acordaba de chiquito que al vino lo hac\u00edan ah\u00ed. Con el pasar de los a\u00f1os y cuando su amigo Eduardo Luna, due\u00f1o de la Bodega Mar\u00eda del Pilar, hace su vino, lo prueba y le gusta; entonces pone a andar su propio proyecto. El a\u00f1o pasado se incorporaron plantas de Petit Verdot. Con un buen manejo como el que hacemos y riego por goteo que es una soluci\u00f3n porque le damos el agua necesaria y los fertilizantes. En cuanto al manejo de malezas, evitamos usar control qu\u00edmico, m\u00e1s bien apostamos a lo org\u00e1nico y hacemos todo lo que es control mec\u00e1nico con una desmalezadora. Insectos casi no tenemos. As\u00ed definimos el potencial productivo de la planta. Hemos ido aprendiendo con el paso del tiempo, sobre la poda: la de formaci\u00f3n, de conducci\u00f3n, en verde, etc. Y uno se va adaptando a ciertos manejos, a las podas, de acuerdo a lo que busca. Para ser el primer a\u00f1o, con plantas muy j\u00f3venes, la producci\u00f3n fue buena. Esta pr\u00f3xima cosecha ya se espera sea mucho m\u00e1s grande. El potencial productivo de estas plantas se expresa entre los 5 y 7 a\u00f1os. Contamos con un en\u00f3logo mendocino, Juan Manuel Mallea quien se encarga de la vinificaci\u00f3n. El proceso comienza con el despalillado, se sacan las semillas, el hollejo, se filtra y queda el mosto. El jugo de uva obtenido pasa por un proceso de enolog\u00eda, que es la maceraci\u00f3n y fermentaci\u00f3n, hasta llegar al almacenamiento y estacionado. El estacionamiento es de aproximadamente 6 meses en un barril de roble franc\u00e9s. Por eso decimos que el nuestro es un vino Malbec joven, porque para llegar a ser reserva debe estar estacionado m\u00e1s de un a\u00f1o. Nos han salido mil botellas de Malbec puro. Notamos diferencia en la producci\u00f3n, que no es igual que en la zona de Mar\u00eda del Pilar, porque los microclimas son diferentes, los suelos son diferentes. Estamos compartiendo lotes de algod\u00f3n, con la vid. Tratamos de utilizar toda la superficie en algo productivo. Tenemos una parte ganadera, y tambi\u00e9n nuestra parte algodonera. Estamos adaptando este campo porque era un campo hort\u00edcola con un sistema de riego por goteo. Hemos anulado el sistema de goteo para hacer algod\u00f3n con riego por superficie. <span style=\"font-size: inherit;\">Hicimos un riego pre siembra, pero no creo que podamos hacer uno m\u00e1s. Implantamos la variedad 1238 y bueno, nos estamos adaptando a las inclemencias clim\u00e1ticas, la sequ\u00eda y dem\u00e1s que nos hacen jugar con las fechas de siembra, m\u00e1s un buen manejo.
